Artisan Magret Duck Breasts
Our longtime partners and good friends, the Gonzalez family supplies us with some of the most amazing duck breasts you will ever taste. The ducks are raised for foie gras in the true French method. The fresh breasts run about 12 to 14 oz and have a wonderful cap of richly delicious fat. When rendered down to a crisp exterior, that unctuous fat has a flavor that is unparalleled. The meat itself is deep red in color and incredibly rich in flavor. This screams center-of-the-plate, and is large enough that half a breast makes a gracious portion.
